AIR FRYER SERIES: CHICKEN PARMESAN

Chicken Parmesan has always been one of my favorite comfort foods in Fall and Winter seasons. My hesitation to preparing it is that it’s involved recipe. 

Chicken breasts are revered for the leanest part of the chicken and loaded with healthy goodness. It’s loaded with B vitamins, B6 and B12, and niacin. As well carries a powerful source of protein, selenium, and phosphorus. 

This healthy goodness can help with your muscle mass, bone health, as well your appetite control. In this series I will be using the Cuisinart Air Fryer as it’s multifunctional. Here we go!

Ingredients

2 large skinless, boneless chicken breasts

Kosher salt

Freshly ground black pepper

1/3 c. all-purpose flour

2 large eggs

1 c. panko bread crumbs

1/4 c. freshly grated Parmesan

1 tsp. dried oregano

1/2 tsp. crushed red pepper flakes

1/2 tsp. garlic powder

1 c. RAO’S Marinara Sauce

1 c. shredded mozzarella 

Freshly chopped parsley, for garnish

The Method

Wash chicken breasts well, and taking off any remnants of fat. Then carefully butterfly the chicken by cutting in half widthwise all the way through. You are creating  4 thin pieces of chicken. Season both sides with salt and black pepper.

Place the 1/3 c flour in a bowl; season with a large pinch of salt and a few grinds of black pepper. In another bowl, beat 2 large eggs to blend. In a third bowl, combine 1 c panko bread crumbs, 1/4 c freshly grated Parmesan, 1 tsp dried oregano, 1/2 tsp red pepper flakes, and 1/2 tsp garlic powder.

You will do the process one at a time, first coat chicken in flour, then shaking off any excess flour. Then dip into egg mixture, letting the excess drip off. Next you will finally dip into the panko mixture, and gently press into chicken to adhere and ensuring both sides of chicken are well coated.

Working in batches so that it fits in your air-fryer basket. Arrange chicken in a single layer. Cook at 400°, turning once, for 5 minutes on each side. Top chicken with warmed RAO’S marinara sauce and freshly grated mozzarella. Continue to cook in your Air-fryer at 400° until cheese is melted and golden, about 3 minutes more.

Enjoy this slice of heaven with a wonderful green Arugula and Red Leaf Lettuce with sliced cucumbers.   Enjoy!
