AIR FRYER SERIES: CAULIFLOWER TACOS

Who can pass up a good taco? Then on top of it a taco that is a healthy option. Well… this Cauliflower Taco is it! It is the the best for any day of the week, and any dang season. 

This delish cauliflower taco is packed with the healthiest nutrients …it’s high in Vitamin C; B6; Panothenic Acid; Potassium; Manganese; Choline; Magnesium; Phosphorus; as well a great source of Folate. Oh! And a great source of fiber. 

The avocados provide a heart healthy fat, that’s rich in Fiber, Folate , Potassium, Vitamin E, and Magnesium. 

Limes will provide a high percentage of Vitamin C; good source of Vitamin B6; Folate; Potassium; Calcium; and Magnesium. This helps to promote glowy skin.  Garlic fights bacteria and viruses. Cilantro rids the body of heavy metals and aluminum, to mention a few of cilantro’s properties.  In this series I will be using the Cuisinart Air Fryer as it’s multifunctional. Enjoy!

Ingredients

Cauliflower - medium size head 

Red Cabbage - medium size head

Small Red Onion 

2 cloves of Garlic 

1 Lime 

Sea Salt 

Jalapeño 

Chili Powder 

Cayenne Pepper 

Cumin

Garlic Powder 

Black Pepper 

Raw Milk

Panko Bread Crumbs

Cilantro 

Corn Tortillas 

1 Avocado

2 Limes

1/2 C Mayonnaise 

2 T Sriracha 


The Method

Slice cauliflower into bite size florets set aside in a bowl. 

In a small bowl we are going to prepare the slaw - 1 c. thinly sliced red cabbage;  1/2 small red onion, diced;  1 jalapeño, chopped finely; 1 clove garlic, chopped finely; Juice of 1 lime; 2 tbsp. apple cider vinegar; and a Pinch kosher salt. You will just need to stir the slaw mixture occasionally. 

Next the mixture for the cauliflower florets to dip before frying. So in a medium bowl, combine 1 1/2 C of flour and spices - 1 T chili powder; 1/2 tsp cayenne; 1/2 tsp cumin; 1 T garlic powder; and season well with salt and pepper. Add almond milk and stir to combine. Mixture should be thick, but still easy to dip cauliflower into. Add a little more milk if needed. Then place panko into small bowl.

Dip florets into milk mixture, wipe off excess flour mixture off, then toss in panko.

Preheat AirFryer to 400 degrees and coat with cooking spray. Work in small batches, place coated cauliflower into basket of air fryer. Cook at 400° for 15 minutes,  halfway through turn the cauliflower, and spray with more cooking spray if needed. 

Combine vegan mayonnaise, sriracha, and maple syrup, for the dipping sauce. Stir well, and set aside. 

Now the fun part….assembling your tacos. On a tortilla put the cooked cauliflower, avocado, pickled slaw, cilantro, and a drizzle of sriracha mayo. Serve with lime wedges.  Enjoy!
