FOOD SPOTLIGHT: SHAKSHOUKA

Short and simple this dish is easy and simply delicious. The dish is said to have originated in Tunisia, it is popular in North Africa as well as the Middle East.

You can have this aromatic dish for breakfast, lunch, or dinner. It is slightly poached eggs in a chunky tomato and bell pepper sauce - and fast and easy to prepare.

Tips to get started…..

  1. Olive Oil ….Extra Virgin you can get from Trader Joe’s it ranges from $7.99 to $11.99. You will need 2 tablespoon.

  2. 1 tablespoon of Butter. Just note the better the quality of butter the more rich the flavor. It ranges from $3.86 to $4.49 for 8oz.

  3. 1 Red Onion. A red onion cost can range from $1.27 to $3.49 for a 2 pound bag. You will dice the red onion.

  4. In a frying pan you will put 1T of butter and 2T of olive oil with the whole diced red onion. You will fry the red onion until it’s deep brown.

  5. 1 bulb of Garlic. Organic Garlic can range from $1.99 to $7.99. You will use one whole bulb. Chop garlic and add to olive oil, butter, and onion mixture…fry until raw smell dissipates.

  6. 2 Roma Tomatoes. I select the dark more ripe tomatoes. Roma tomatoes range in price from $1.49/per pound. Tomato Paste price ranges from $.79 to $1.29 per can. Typically you can get 6 to 7 tablespoons from one can. Dice the Roma tomatoes and add to the onion and garlic mixture. Also add 2 tablespoons of tomato paste to the mixture. Cook this mixture until it cooks down.

  7. 1 Red Hot Chili … chop and put into mixture, and stir.

  8. Add Seasonings - Salt, and Arab Seasoning Mix ( either Baharat, Five Spice, or Hawaiij). Add spices to taste and then stir.

  9. Now put holes into the mixture, and then crack eggs and place into the mixture.

  10. Immediately cover the pan and allow the eggs to gently poach.

  11. When done garnish with chopped Parsley. The parsley can range from $1.50 to $2.00 a bunch.
