FOOD SPOTLIGHT: ORZO SPOTLIGHT CHICKEN OR SHRIMP

Let’s be honest everyone and I mean everyone loves a good pasta dish. There is something about pasta that can just nourish us from the inside in such a special way. 

What makes this pasta dish even better is how fast it can be prepared, and you can eat. Pasta is pasta and you can have different shapes and sizes of pasta. And the taste is the same, different shapes hold the sauces differ. However, the shape of the Orzo pasta can make me feel so special. 

This fast recipe takes me back years. It was my go to fail safe dish to make for my family when I was short on time in my day. It never disappointed. I absolutely love just how this dish aesthetically looks and the heartiness and creaminess of this dish doesn’t disappoint. 

This Orzo Pasta dish is rich in fiber; carotenoids; antioxidants; potassium; vitamins C, K, B12; and selenium. It also has great anti-inflammatory properties, and supports bone health. 

Ingredients

1 Pound of Orzo Pasta 

1 jar of Rao’s Marinara Pasta Sauce 

2 Large Carrots 

2 Large Stalks Broccoli 

1 Pound of Spinach 

1 Pound Ground Chicken or 1 1/2  Pound Shrimp Medium Size 

1/2 C of fresh Basil

2 T Ghee

The Method

Clean your protein  if you selected shrimp, make sure you devein if not already. Season with salt and Trader Joe’s 21 Seasonings. Set aside. 

  • If you decide on ground chicken as your protein- season it with sea salt, Trader Joe’s 21 Seasonings.  

  • Cut in small to medium size pieces carrots and broccoli. Put amount of spinach in bowl. 

  • Chop fresh Basil and set aside. 

  • Cook Orzo pasta according to directions on package. Once done set aside. 

  • Cook ground chicken until almost done. Set aside. 

  • Sauté with 1T of ghee carrots and broccoli for a few minutes. Not until completely done. 

  • In large pot sauté 1T of ghee and seasoned shrimp for a minute. Remove from heat - Add cooked Orzo pasta , cooked vegetables, spinach, and Rao’s Marinara Sauce , and basil. Sauté  all ingredients until shrimp is cooked (pink in color) Enjoy!
