FOOD SPOTLIGHT: SHEPERD’S PIE
Sheperd’s Pie is a classic English dish. It is hearty and comforting dish.
Ingredients
2-3 pounds ground lamb
1 cup peas
3 tbs tomato paste
1 tbs Worcestershire sauce
2 carrots peeled and diced
2 sprigs of thyme
Half tsp of Rosemary
2 yellow onions
10 russet potatoes
Half a stick of butter
1 cup of milk or heavy cream
English coastal cheddar cheese
Salt and pepper to taste
For the filling:
Take the diced 2 yellow onions and sauté until golden brown
Add in garlic and sauté until golden brown as well
Take the lamb meat and brown, making sure to stir well to make sure it it is all cooked through
Put in carrots and cook with lamb for 10 min
Put in tomato paste with the thyme and Rosemary and Worcestershire sauce and stir.
When carrots are done out in the frozen peas and cook for 5 min. When the filling is done set aside.
Potato crust:
Peel all the potatoes and put them in a heavily salted pot of water. Cook until the potatoes are cooked through.
Heat up butter with heavy cream or milk until combined
With the cooked potatoes put in cheddar, and start to mash with the milk and butter mixture. The potatoes should be creamy but have some stiffness to them. Salt and pepper to taste
Assemble pie:
In a baking dish, put in lamb filling and make sure it’s firmly packed. Carefully put the mashed potatoes on top and smooth. You can then use a fork go score the top to create a pattern. In a pre heated oven (400 F) put in the pie and bake for 25-30 min until the potatoes get a golden tint. Let rest and then enjoy!
