FOOD SPOTLIGHT: REINA PEPIADA
Arepas is a dish very unique to the countries of South America, mainly parts of Venezuela and Colombia. It is more of a dense cornmeal cake that is comparable to an American hamburger and that can be whipped up so quickly.
Ingredients
3 pounds chicken breast
5 tablespoons mayo
5 avocados
1 white onion
Salt
Pepper
Cilantro 1 bunch
Arepas
2 cups pan harina
2.5 cups water
Salt to taste
Tablespoon oil
Boil chicken breast until tender with salt and one whole onion cut in half
While it’s cooking make arepa dough. Take water and mix salt and oil until dissolved. Slowly incorporate arepas flour whisking vigorously. Until smooth dough
Once chicken done shred it. Roughly mash avocado and put it on shredded chicken with 5 tablespoons of mstonaise. Also dice up an onion and put it in it too as well as the one bunch of cilantro. Mix well with salt and pepper.
Cook arepas on cast iron skillet with a little oil until crust forms and then put them on a baking Sheet and cook for 10 minutes on 350 until they puff a little.
Once arepas are done, carefully cut it open to make a pocket and stuff with chicken salad mix and enjoy
