FOOD SPOTLIGHT: MASOUB
Masoub is a dish very unique to the countries of the Arabian Peninsula, mainly parts of Saudi Arabia and Yemen. It is more of a dense banana pudding that can be whipped up so quickly.
Ingredients
2 Whole wheat pitas or flatbread
3-4 bananas ripened
Handful of dates
2 T of honey
I can of Qishta Cream or half cup of Whipped Cream. A wonderful vegan alternative - SoDelicious Coco Whip or Silk Dairy Free Heavy Whip Cream
Black seeds / nigella
Start with ripping up the bread you will be using. After heat it up in the oven. Or you can put it directly into the food processor and grind to small pieces with dates.
Take it out of the food processor and set it aside. Take ripened bananas and begin to mash until smooth. Begin to incorporate the bananas into the bread and date mix and mash to bring it together.
Take the Qishta (Arab clotted cream) and put it on top or mix with the mixture, or SoDelicious Coco Whip Cream. If you can’t find Qishta you can whip of some heavy cream until the peaks are very stiff so can hold up to the warmth of the Masoub.
After it’s all I’ll mixed, and the cream is on top, drizzle it with honey and sprinkle with black seed. I’ve seen it eaten with shredded cheese, and cornflakes, don’t be afraid to experiment with toppings.
