FOOD SPOTLIGHT: AVOCADO TAPAS

These Tapas are the best! And a beyond delicious way to get your vitamins C, E, K, and B6, as well as riboflavin, niacin, folate, pantothenic acid, magnesium, and potassium. Avocados also provide lutein, beta carotene, and omega-3 fatty acids. Avocados contain high levels of healthy, beneficial fats, which can help a person feel fuller between meals.

Then the Tapas have the added punch of protein. Tuna has 30 grams of protein, and full of omega-3 fats. It has been shown that eating more omega-3 is associated with reduced rates of cardiovascular disease, including heart attacks.

Tips to get started…..

  1. Purchase a couple of avocados. The most I have paid for them is $.89/each. Select the ones that are slightly soft. Cut them in half. Remove the pit. Lightly sprinkle Sea Salt, and drizzle lemon on each half. I also sprinkle both halves with Aleppo Pepper.

  2. Purchase a can of tuna. I like the tuna packed in water, or olive oil. A can of tuna can range from $.82 a can to $2.39 a can. To prepare the tuna… mayonnaise to your desired taste , mustard to your desired taste, 1/4C chopped red onion, 1/2 jalapeño pepper to taste, and 1/4c of chopped carrots. You can season with Sea Salt to taste.

  3. Scoop out tuna fill the center of the avocado. Garnish with desired amount of cilantro.
