AIR FRYER SERIES: TILAPIA WITH SAUTÉED RED POTATOES

This is one of my go-to dishes when I want that light but tasty dish. It’s perfect for when I’m in the mood for good flavor, and I want to be out of the kitchen fast. With the Tilapia fish it’s light and mixes well with various side dishes. Tilapia is high in Vitamin B12 and protein, it’s low in fat, but rich in Phosphorus. The benefits of incorporating red potatoes are crazy. They are low in fat. High in Vitamin C, Potassium, and the very best is they don’t have sodium and cholesterol. This recipe is easy, fast , and so dang delicious. In this series I will be using the Cuisinart Air Fryer as it’s multifunctional. Here we go!



Ingredients

4 Tilapia Filets 

Red Potatoes 


4 Red Potatoes- medium size 

4 Green Onions 

3 cloves Garlic 

3 Tablespoons Raw Butter 

Cornmeal 

Dried Oregano 

Paprika 

Dark Brown Sugar

Thyme

Cumin 

Garlic Powder 

Kosher Salt 

Freshly ground black pepper 

Olive Oil cooking spray 


The Method

Preheat Air fryer to 400 degrees.

In a small bowl, combine 1 tbsp cornmeal, 2 tsp dried oregano, 2 tsp paprika, 1 tsp dark brown sugar, 1 tsp dried thyme, 1 tsp ground cumin, 1/2 tsp garlic powder, 3/4 teaspoon salt, and 1/2 teaspoon pepper. 

Wash the Tilapia and split open like a butterfly. Pat tilapia dry with paper towels; generously season both sides with cornmeal mixture (use it all), pressing to adhere. Spray both sides of fish with cooking spray.

In an air-fryer basket, place 1 fillet. Cook at 400° until just cooked through, 4 to 6 minutes. Repeat with remaining fish

Red Potatoes -

Wash 4  Red Potatoes 

Put in pot of water to boil. Make sure water covers the potatoes. 

Boil until done. After a half hour stick sharp knife into one to see if is done. 

When done. Drain water. Let cool. 

Chop all green onions, and garlic. Set aside. 

In another pot spray bottom with Olive oil spray. Place sliced red potatoes, green onions, and garlic. Also place 3 tbsp of raw butter. Sauté over medium to low heat. 

It is done once garlic and green onions are cooked and potatoes are well coated with mixture. 

To make this fast and delicious meal complete add a fast green salad. All I can say enjoy and you’re welcome.
