AIR FRYER SERIES: CHICKEN SANDWICH

I’m telling you this is one of my favorite recipes that makes me feel so comforted in all seasons. The best thing about this chicken sandwich is that you can be as creative as you want with the condiments. Sometimes I will add - avocado slices; jalapeños; or a cabbage slaw. 

This fun recipe not only is fast but delivers good health benefits. Of course with the main ingredient being chicken it provides a great dose in promoting healthier bones; nutrients; also several B vitamins; choline; and selenium. This ingredient helps so much in building muscle growth, your benefits of weight management, and your brain health. 

Butter lettuce especially has a huge amount of antioxidants, carotenoids. To mention just a few - lutein, zeaxanthin, and beta carotene. It’s an excellent source of vitamin A , vitamin C, vitamin K, calcium, and iron. Although it has a lower fiber level, but it’s easy on your digestion!  In this series I will be using the Cuisinart Air Fryer as it’s multifunctional. Here we go!

Ingredients

4 Brioche hamburger buns 

4 (4-oz) Chicken Cutlet - Lean 

Kosher salt 

Freshly ground black pepper 

2 large eggs 

4 tsp. yellow or honey mustard, plus more for serving

Sliced butter pickles for serving

1/2 tsp. sweet paprika

1/4 tsp. garlic powder

1/8 tsp. cayenne

1/4 c. all-purpose flour

1 c. plain bread crumbs

Olive oil cooking spray

Butter lettuce leaves

4 sliced tomatoes  

The Method

Preheat Air-fryer to 400 degrees.

Wash chicken cutlets. Pat chicken dry with paper towels; season all over with 3/4 teaspoon salt and 1/4 teaspoon black pepper.

In a bowl, whisk 2 eggs, 4 tsp mustard, a splash of pickle juice from sliced pickles, 1/2 tsp paprika, 1/4 tsp garlic powder, and 1/8 tsp cayenne until combined. Place 1 C bread crumbs and 1/4 C  flour in separate shallow bowls.

Place chicken cutlet one at a time into flour, shaking off any excess. Place chicken into egg mixture, letting any excess drip off. Coat chicken in bread crumbs, gently pressing to adhere. Transfer breaded cutlet to a plate.

Coat an air-fryer basket with cooking spray generously. Working in batches, arrange 2 cutlets in a single layer in basket. Spray chicken generously with cooking spray until it’s evenly coated. Cooking at 400º. You will flip the chicken halfway through, and spraying generously the second side with cooking spray, until breading is golden brown and chicken is just cooked through. You will cook for approximately 8 to 10 minutes. Transfer to a wire rack and let cool 5 minutes.

Lightly toast the Brioche Buns 

On bottom bun place chicken cutlet. Then you will layer the lettuce, tomato, and pickles over chicken. Then spread top bun with mustard and close sandwich. Enjoy!
