How would you introduce yourself to people who are unaware of you?
I’m a Chef in Paris.
What’s the best knife you can’t live without?
Zwilling’s Chef Knife. I literally use it for everything I do.
They’re German and great for everyday use and easy to sharpen.
What’s the staff meal your kitchen gets most excited about?
Gratin Dauphinois. We make potatoes with cream and parmesan…it’s one the staff really enjoys.
What are the kitchen staples everyone should keep in their place (even if they’re not a Chef)?
Good salt- Maldon Sea Salts, higher quality olive oil and spices.
What is your recommendation for easy but crowd pleasing NYE food?
NYE is complicated because people want to drink more than eat.
I recommend Domaine de Bichery Champagne.
What is your naughty food indulgence?
Five Guys Burgers and M&M’s.
What is the most overrated ingredient?
Caviar

Williams Pear Alcohol
After a long day at work you go home and…?
Depends on the day. Just relax and read a book when I have time
